Abstract

Apart from the well-known diagnoses celiac disease and wheat allergy, current data suggest the existence of another disease related to wheat and gluten: the so-called "non-celiac wheat sensitivity". Since no particular pathogenetic mechanism has been identified yet, both diagnostic and clinical criteria remain controversial issues. Notwithstanding ongoing research, the prevalence of this disease pattern is likely to increase in the near future.
